Butternut Squash Shourwa  Bowl 13 Cup 7

This colorful seasonal soup (shourwa) starts with butternut squash sautéed with chopped fresh red onions, fresh ginger & spices – black cardamom, cloves, stick cinnamon, fresh bay leaf, finely ground cumin, coriander, turmeric & chili pepper and simmered in a rich vegetable stock. The savory mix is pureed to a silky blend and made creamy and rich with added coconut milk. A sprinkle of Roti’s house roasted garam masala and chopped fresh cilantro and scallions finish the top.

Whole Game Hens, locally sourced, are split in two and marinated in a blend of  minced fresh garlic and ginger, ground cumin and coriander, red chili pepper,                         black pepper , salt , spices, oil & yogurt. The succulent hens are skewered, roasted in the mesquite charcoal of the tandoor and slipped onto a plate finished with a                      nest of fresh baby arugula dressed with a light vinaigrette & roasted pistachio nuts.

Succulent pieces of all natural  Mary’s  Free-Ranch Pekin duck breast are marinated in a spiced yogurt blend of minced fresh ginger and garlic, ground red chili pepper, turmeric, ground cumin, coriander, salt & black pepper. They are skewered and roasted over the mesquite charcoal of the tandoor and served sizzling hot with an assortment of sliced red & green bell peppers, cabbage and red onion.

Halibut Curry 30.

Fresh Halibut is simmered in a rich coconut sauce. Whole cumin (jeera)  and mustard (rai) seeds are lightly roasted in coconut oil with curry leaves (kari patta)  and asafetida(hing).  Chopped fresh onions are sautéed until tender in the coconut oil. Minced fresh green chili & ginger is added along with finely ground roasted cumin,coriander (dhania) and turmeric (haldi). Lastly, coconut milk is blended in to the savory sauté to simmer and cook the fresh Halibut until tender and flaky

This delightful vegetarian dish starts with a blend of minced potatoes, cauliflower, carrot and paneer –  homemade farmer’s cheese, minced fresh garlic, ginger and green chilies,  finely ground red chili powder, crushed black pepper and Roti’s finely ground house roasted garam masala. The mixture is formed into small balls and fried in the hot oil of             the karahi. Simmering on the range is a savory onion & tomato sauce flavored with cloves, cinnamon, garam masala, red chili pepper, crushed black pepper & Almond. Cream – malai is added to finish the sauce before the kofta – vegetarian balls, are placed in the sauce and simmered together creating a rich & savory dish
